style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Lavez les pommes de terre rattes et plongez-les dans une cocotte d&rsquo;eau froide \u00e0 hauteur.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Faites-les cuire environ 10 minutes, la pointe d&rsquo;un couteau doit pouvoir entrer sans r\u00e9sistance.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Enrobez les pommes de terre de beurre, salez et poivrez-les, puis saupoudrez-les d&rsquo;aneth cisel\u00e9e.<\/span><\/span><\/p><p><strong><em><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Pour la truite :<\/span><\/span><\/em><\/strong><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> Pr\u00e9chauffez le four \u00e0 200 \u00b0C.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Assaisonnez les pav\u00e9s de sel et de poivre.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Dans un po\u00eale chaud avec un filet d&rsquo;huile d&rsquo;olive, colorez les pav\u00e9s \u00e0 feu doux, c\u00f4t\u00e9 peau, environ 5 minutes jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient cuits aux \u2154 et que la chaise soit encore ros\u00e9e sur le dessus.<\/span><\/span><\/p><p><strong><em><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Pour la sauce :<\/span><\/span><\/em><\/strong><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> Ciselez finement l&rsquo;\u00e9chalote.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Triez l&rsquo;oseille puis lavez les feuilles.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">\u00c9gouttez-les et retirez les queues et nervures centrales pour ne conserver que la partie tendre de la feuille.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Faites bouillir une cocotte d&rsquo;eau avec le gros sel, puis blanchissez l&rsquo;oseille pendant 3 minutes.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Refroidissez rapidement les feuilles en les plongeant dans l&rsquo;eau glac\u00e9e puis \u00e9gouttez-les.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Dans un po\u00eale chaud avec du beurre, faites revenir l&rsquo;\u00e9chalote, ajoutez le vin blanc et laissez r\u00e9duire de moiti\u00e9.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Ajoutez la cr\u00e8me et l&rsquo;oseille et laissez \u00e9paissir la sauce.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Assaisonnez de sel et de poivre.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">M\u00e9langez finement la sauce.<\/span><\/span><br \/><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Servir chaud.<\/span><\/span><\/p><p><em><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Astuce du chef : demandez \u00e0 votre poissonnier de conserver la peau sur les pav\u00e9s, celle-ci prot\u00e9gera la chaise d&rsquo;une trop forte chaleur et vous pourrez ainsi r\u00e9aliser une v\u00e9ritable cuisson \u00e0 l&rsquo;unilat\u00e9rale, avec un d\u00e9grad\u00e9 de textures.<\/span><\/span><\/em><\/p><p><i><span style=\"vertical-align: inherit;\"><span
